01 - 8 oz cream cheese, softened
02 - 1 cup sharp cheddar cheese, finely shredded
03 - 2 tablespoons chives, finely chopped
04 - 1 teaspoon Worcestershire sauce
05 - 1 teaspoon Dijon mustard
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon black pepper
08 - Pinch of salt
→ Coating & Decoration
09 - 1/2 cup finely chopped toasted pecans
10 - 1/2 cup finely chopped parsley or fresh dill
11 - 24 mini pretzel sticks
12 - 24 small rosemary leaves (optional)
# Method:
01 - In a medium bowl, blend cream cheese, shredded cheddar, chives, Worcestershire sauce, Dijon mustard, garlic powder, pepper, and salt until smooth and evenly mixed.
02 - Scoop heaping teaspoons of the mixture and mold into small oval or acorn shapes by hand.
03 - Press the top half of each cheese ball into chopped toasted pecans and the bottom half into chopped parsley or dill for a contrasting finish.
04 - Insert one mini pretzel stick into the top of each cheese ball to simulate an acorn stem; garnish with a rosemary leaf if desired.
05 - Arrange on a platter and refrigerate for at least 15 minutes before serving to achieve optimal texture.
